Fresh Mango Cooler
 

INGREDIENTS
  SHOPPING LIST
  2 large ripe mangos (for about 3 cups chunks)
  Juice from one lime-o-lemon or 2 to 3 tablespoons B &B liqueur
  3 cups plain or carbonated water
  1/4 cup sugar or less
  1 tray ice cubes (12)

1. Rinse and peel the mangoes. Then using a sharp knife, place the mango on a sheet of foil on a chopping board. Carefully cut the flesh off the pit. Mango can be real slippery.

2. Pour the fruit and accumulated juice into a blender or food processor. Add the lime or lemon juice or liqueur, 1 cup of the water and the sugar. Whirl or process the mixture until it is thick and smooth.

3. Pour the pureed fruit through a fine-mesh sieve or strainer into a large bowl, pressing the fruit with a wooden spoon to extract all the liquid. Discard the pulpy bit.

4. Add another cup of water to the bowl, and stir until the mixture is smooth. If the cooler is real thick, add remaining water until of drinkable consistency, mixing well.

4. Serve the drink in tall glasses over ice cubes.
