Spicy Mango Shrimp Salad
   

INGREDIENTS
  SHOPPING LIST
 

1 cup Uncle Ben's Long Grain White Rice, uncooked

  1/4 each red bell pepper, yellow bell pepper and yellow onion (about 2 tablespoons), diced small
  1/4 cup each mango, papaya, kiwi and pineapple (or other favorite tropical fruit)
  1/4 teaspoon each black pepper, chili powder, paprika and ground coriander
  12 shrimp, peeled and cleaned
  4 tablespoons mirin or unseasoned rice wine vinegar
  2 tablespoons fresh basil, chopped
  2 tablespoons fresh mint, chopped

Spicy Mango Shrimp Salad
Preparation Time : 30 minutes
Servings: 3
 

1. Prepare rice according to package directions. Cool.

2. Mix peppers, onion and fruit in large bowl; set aside.

3. In small bowl or plastic storage bag, combine pepper, chili powder, paprika and coriander. Oil shrimp and toss with seasonings to coat.

4. Place shrimp on skewers and grill until white inside (about 2 minutes).

5. Mix together rice and mirin. Season with salt or additional mirin to taste. Stir in basil and mint. Add fruits, vegetables and grilled shrimp, tossing to coat.
